lazy dayz

after being quite stressful today at school i was pleased to remember that i didn't have to work at night, so i went home early and lazed around. not too terribly different than every other day except more time to laze.

however one thing different was that i had a conviction to bake. specifically make mochi cake. annnd after going through a grip of different recipes i jumbled them together to create my own version from what i had readily on hand at home (not wanting to go out again to buy ingredients came with the laziness)




  
 
i played with the recipe to see how it differs. One is plain in a  greased pan with oil, while the other has sweetened coconut on top  in a pan greased with butter.

Mochi cake recipe
  • 1 box of mochiko flour (1 lb of mochi flour)
  • 3 eggs
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups of milk *
  • 1/3 cup of vegetable oil
  • sweetened coconut flakes (enough to sprinkle on top) optional
Preheat oven to 350 degrees. Grease pans with either oil or butter. Mix together all of the ingredients except for the coconut flakes.  pour batter into greased pans and sprinkle desired amount of coconut over the top. Bake in oven for approx. 45-50 minutes or until tester comes out clean and the top is nicely golden with edges lightly brown.

Let stand and cool for a few minutes before loosening the edges with a knife. Slice and enjoy hot, cold, or lukewarm :)
*i used fat free and the consistency still came out chewy and dense*
